For an authentic, off-the-beaten-path experience near the natural and archaeological wonders of Cappadocia, check in to the divine Gamirasu Cave Hotel in the tiny village of Ayvali. Two young local men founded the 18-room inn, which occupies a restored, 1,000-year-old Byzantine monastic cave retreat, burrowed into cream-colored volcanic rock. The rooms are simple and spare, decorated with futons, carved wood furnishings, colorful woven rugs and embroidered silks. Some of the larger suites have hot tubs and fireplaces. The rock walls naturally regulate the room temperature, but there's central heating if you need it. There's also telephones but no TVs—they would detract from the dwelling's spiritual aura. On a stroll through the village you won't find any tourist attractions or people hawking knickknacks, just a traditional place filled with history and beauty, one where women wear headscarves and people still ride on donkeys. Ask the friendly hotel staff to arrange guided excursions to the ancient underground cities and remarkable volcanic rock formations of Cappadocia, a UNESCO World Heritage Site. The restaurant serves Turkish dishes using organically produced food, and the cream at the buffet-style breakfast comes right from the owner's own cow. Incredibly romantic, but don't expect any nightlife. A one hour free shuttle drive from Kayseri airport.
