Tucked away down a backstreet in Palma's old town, this converted 17th-century monastery has original vaulted stone ceilings, and appropriately minimalist public rooms with designer furnishings, modern art and shagpile rugs taking center-stage. Its 14 rooms and suites are bright and airy, decorated in various shades of white, deep reds and browns, with delicate muslin drapes, pale oak floors and ultra-chic bathrooms. I hope you're not afraid of ghosts—the spa and Turkish bath are underground where the crypt used to be, most definitely a place where you can rest in peace. The restaurant, in the old refectory, attracts guests as well as discerning locals—always a great sign. Don't miss the excellent art gallery with changing exhibitions of photography, pottery, paintings and sculpture. The service is a bit iffy, and the hotel is not on one of Palma's nicer streets, but the central location does make it very convenient for easy sightseeing and checking out the happening nightlife.
