Jody Adams, the James Beard Award-winning chef at Rialto in Cambridge, just outside Boston, says entering the Grand Hotel Timeo feels like stepping into another era. "There’s a huge patio that overlooks the water. And everything is just beautiful in the dining room. There’s elegant silver bowls for breads, big glasss bowls for fruit and cereal, and fresh ricotta with honey—and that’s just for breakfast!" The property dates from 1873, and has grown up with the grandest of Europe’s 19th-century tourists. Original wooden floors complement updated earthy-toned fabrics in the 83 baroque rooms, which come with balconies and marble bathrooms—but watch out: I found that some can be unexpectedly small. You won’t find a lot of cars in the village. You will find tourists galore, especially in late spring. Timeo is a serene refuge from the bustle. You approach the hotel through a shadowed covered walkway and you’re welcomed by a cool, elegant lobby. Enjoy the hotel’s private beach, or hit the links at the nearby golf courses. Surrounded by sea, there’s no shortage of picturesque views. "It’s sort of built into a hill so you look down into the water and above is the ruin of a Greco-Roman theater. Mount Etna is up there and all these beautiful sailboats are floating around in the water." The two restaurants serve a wide selection of Sicilian and Mediterranean cuisine. The fitness center has an outdoor pool (seasonal), a gym and a wide range of health and beauty treatments, including Hammam steam baths and aromatherapy massages. One hour’s drive from Messina. 35 miles from the airport at Catania.
