The wonderful Maui Ocean Center takes the Hawaiian aquarium concept to a new level, offering scuba-certified divers the chance to climb into the 750,000 gallon Open Ocean exhibit and swim with sharks, stingrays and thousands of tropical fish. After a briefing and prep by a dive master (the center provides the air tanks and weight belts, you have to bring the rest of the gear), you descend into the exhibit for a dive lasting 30 to 40 minutes. Divers must be at least 15-years-old, and dives are limited to four a day, so advance bookings are essential. Available Monday, Wednesday and Friday year-round.

Former pro-surfer turned instructor Hans Hedemann opened his self-titled school in 1995, and ever since he and his team have been teaching locals, visitors and movie stars such as Cameron Diaz how to carve through waves—or at least stand up on a board. The school now has six locations on the north and south shores of Oahu, and offers pick-ups from most hotels. Take a one- or two-hour private lesson with a skilled instructor—or, for a little extra cost, with Hedemann himself. Calling all groovy dudettes! This is a great way for women to learn to surf in a safe and fun environment. Founded by former pro-snowboarder Me-Shell Barnas, who is also an accredited yoga instructor, this week-long, women’s only program combines surfing and yoga at a retreat on a secluded Maui estate. Each morning begins with a yoga class and a healthy breakfast prepared by a private chef to set you up for three hours of surf lessons on a nearby beach. Afternoons are your own to attend workshops, hike, explore Maui, snorkel, enjoy a massage or another yoga class, or just relax with a siesta in a hammock under a shady tree. If the surf’s up, you can head back into the water to build up an appetite for a gourmet dinner (trust me, you’ll have earned it!) with fellow surfers. The accommodations have 400-thread count sheets, and hot tubs in most rooms for a post-surf soak.
