Animal Surf Academy Morocco

The surf experts at UK-based Wavehunters were tired of waiting for warm weather to hit the waves, so they teamed up with fellow Brits at the Animal Surf Academy and started an off-season surf camp in a tiny picturesque village on the coast of Morocco. The next time you're itching for sea-spray and breakers in the middle of January, head for Taghazoute (20 minutes from Agadir Airport) for one-on-one surf lessons or guided surf tours—all geared to your ability level or preference. You'll stay on-site (the closest resorts are in Agadir) in one of 7 bedrooms at the academy's lodge, just minutes from the beach. Accommodations might not be the height of luxury (mod cons are limited to SkyTV), but they are comfortable, and you can't beat the gorgeous views and fantastic roof terrace. Learn to backside on your board at the surf school founded by the late, pioneering French surfer Jo Moraiz, one of the first to ride the waves at Biarritz when surfing first hit France in the ‘60s. Now his son, Christophe, continues his father's legacy and shares his love of the Biarritz waves by teaching students on the legendary Côte des Basques Beach. The professional instructors at the Moraiz Surf School—which is sponsored by Billabong—help students hone techniques in a friendly environment and safe conditions: surfboards are chosen for each participant based on ability, and lessons (taught in English, French and Spanish) are only conducted during low tide periods. Recommended for beginners looking to get their feet wet.

Cornwall Surf Academy

British surfers know to head down to the Atlantic coast of Cornwall, in the southwest corner of England, which benefits from a mild climate and has fine sandy beaches on its northern coastline. Based in Newquay, Cornwall Surf Academy runs programs on some of the best beaches, including the less-crowded Holywell Bay, where the gentle waves are great for beginners. The group and private classes are open to children ages 8 and up, and are ideal for novices and intermediate wave riders. Students use soft, stable boards and lessons start with on-beach safety and basic board instruction, so you'll feel more at ease when you get into the water. Changing facilities and hot showers are available at Holywell Bay, and all surfing gear can be rented.

Damos Surf School

Operating out of Cantabria, in northern Spain, this British-run private surf school takes care of everything, so you can concentrate on conquering those rolling waves. Damos staff will pick you up at Santander Airport and bring you to your accommodations. They offer several package options, from camping to the 4-star Hotel Torres de Somo, or you can choose your own hotel and just sign up for the day courses if you prefer, but Damos' packages seem to be the best deal. Each morning, head out to the beach for two hours of in-water coaching for surfers of all levels, then enjoy the waves at your leisure—the equipment is yours for your entire stay. Instructors are extremely knowledgeable, and will guide you to the best breaking points in the area.

Former pro-surfer turned instructor Hans Hedemann opened his self-titled school in 1995, and ever since he and his team have been teaching locals, visitors and movie stars such as Cameron Diaz how to carve through waves—or at least stand up on a board. The school now has six locations on the north and south shores of Oahu, and offers pick-ups from most hotels. Take a one- or two-hour private lesson with a skilled instructor—or, for a little extra cost, with Hedemann himself. It doesn't matter if you're a first timer or a seasoned board-rider, you'll get one-on-one advice and coaching to help you catch the perfect wave.

This is a great way for women to learn to surf in a safe and fun environment. Founded by former pro-snowboarder Me-Shell Barnas, who is also an accredited yoga instructor, this week-long, women's only program combines surfing and yoga at a retreat on a secluded Maui estate. Each morning begins with a yoga class and a healthy breakfast prepared by a private chef to set you up for three hours of surf lessons on a nearby beach. Afternoons are your own to attend workshops, hike, explore Maui, snorkel, enjoy a massage or another yoga class, or just relax with a siesta in a hammock under a shady tree. If the surf's up, you can head back into the water to build up an appetite for a gourmet dinner (trust me, you'll have earned it!) with fellow surfers. The accommodations have 400-thread count sheets, and hot tubs in most rooms for a post-surf soak. While catering mostly to female surfers, SwellWomen also offers a few co-ed and couples retreats through the year.

The instructors at Australia's Byron Bay Surf School know that picking up a board for the first (or second or third) time can be an intimidating and nerve-wracking experience. Their philosophy is to make sure you learn on waves perfectly suited to your ability, and the varied surf conditions at Byron Bay—the most easterly point in Australia, about 2.5 hours' drive south of Brisbane—create the ideal training ground. Take a two-hour private or group lesson with one of the passionate and dedicated instructors, who'll not only teach you the basics but the art (and science) of wave selection and reading currents, so you'll be more comfortable and confident when you decide to venture out on your own. Safari Surf School

You won't see any high-rise hotels or crowded beaches on this surf vacation. The Safari Surf School, run by American brothers Tim and Tyler Marsh, is all beach and jungle—there's no internet access or ATMs (a mobile bank stops by the school's Nosara base, a four-hour drive from San Jose, twice a week). Don't worry though—comfort is not forgotten in this secluded location. The school's accommodation packages range from basic but comfy to more luxurious lodgings as well as private rental villas. Twice-daily surf instruction, geared to beginner and intermediate abilities, focuses not only on learning to ride the waves, but also on environmental and ocean awareness. There's also plenty of time for relaxing on the black sand beaches, snorkeling, yoga, massages and 4x4 tours. If you want a midweek change of scene, you can split the week between Nosara and the school's other location in Mal Pais; the company can arrange the three-hour shuttle by road or 30-minute air transfer.

According to former pro-surfer Richard Schmidt: “The only prerequisite for learning to surf is knowing how to swim.” In fact, Schmidt and his enthusiastic surf school staff guarantee their clients will stand up by the end of the first lesson—even if it's with a little help from an instructor. Operating year-round on a terrific stretch of beaches in the Monterey Bay area, the Richard Schmidt Surf School offers two-hour group and semi-private lessons or private tuition by the hour. When you schedule a lesson (advance reservations required), you'll be given directions to meet up with your instructor at the location with the best wave conditions that day. Boards, equipment and extra-warm Billabong wetsuits are provided.

Move aside, surf gods. Time for surf divas to strut their stuff. When Izzy Tihany founded her La Jolla-based surfing school for women more than a decade ago, she decided that custom-made programs were the way forward—and she hasn't looked back. Now the school offers private lessons for men and women, as well as summer day camp sessions for 5- to 10-year olds, but the most popular program is the year-round weekend and 5-day clinics for women only. With a minimum of three students per clinic, you won't receive the one-on-one attention of a private lesson, but you'll have a lot of fun—one thing Surf Diva guarantees.
